What Is Cold Storage and How Does It Work?
Cold storage means deliberately holding food, or anything else perishable, in a controlled cold temperature band so that it deteriorates more slowly. That is the whole idea. Everything else, the fridges, cold rooms, reefer trucks, and cooler boxes, is just different hardware for achieving the same thing.
Why cold works
Three things spoil food, and cold slows all three at once.
- Respiration. Fruit and vegetables keep breathing after harvest, using up their own sugars and softening. Cold slows this down sharply.
- Microbial growth. Bacteria, yeasts, and moulds multiply fastest in warm conditions. Below about 5°C, most slow to a crawl.
- Enzyme activity. The natural chemical processes that ripen and then break down food run faster when warm.
As a rough rule, every 10°C reduction in temperature roughly halves the rate at which produce deteriorates. That is why a few hours in the shade instead of the sun can add a day of shelf life, and why proper cold storage can multiply it.
The cold chain
Cold storage is only as good as its weakest link. The cold chain is the unbroken sequence of cold from harvest or slaughter, through storage and transport, all the way to the customer. If produce is cold in the field store, cold in the truck, and then sits warm for six hours on a market stall, the chain is broken and most of the benefit is lost.
This is the single most common failure in practice. People invest in one cold link and lose the produce in the gap between links.
The main types of cold storage
Refrigeration
A fridge, freezer, cold room, or reefer truck uses a compressor to actively pump heat out. It works well, holds any temperature you want, and runs indefinitely. It also requires continuous electricity or fuel, meaningful capital, and it fails completely during a power cut.
Evaporative cooling
Structures like zero energy cool chambers use evaporating water to pull heat out. They are cheap and need no power, but they only work in dry air, cannot get very cold, and cannot travel.
Ice
Cheap, available, and off-grid, but it sits at freezing point, melts within hours in the heat, wets whatever it touches, and has to be bought again every day.
Phase change material
PCM is engineered to melt at a chosen temperature rather than at 0°C like ice. - Fixed location, reliable power, high volume: a cold room or commercial refrigeration.

- Short term, drinks only, a few hours: ice will do.
